Instagram post 2193804560823357339_529321444 [#sponsored] (Recipe shared at the end!) This butternut squash pie was a big moment where I looked down with great pride and said I. MADE. THAT.  From scratch!  The crust too!  And it was easy!  And it tastes really good!! In my past search for the homemade way to make pumpkin puree for pumpkin pie, I repeatedly read that butternut squash tastes better, looks better, and is easier to work with.  Luckily @oxo invited me to take part in their butternut squash Cooking Challenge and I’m so grateful it gave me the nudge to test this pie theory because now I know: butternut squash pie, though very similar, is better than pumpkin pie.  Pumpkin pie lovers- you must try it out and tell me whether you agree!  This pie was made possible by @oxo products (swipe left to see everything I used), especially the very sharp and large vegetable peeler that made it quick and easy to peel the butternut squash.

Pie filling recipe below. Check my stories for the pie crust recipe!

Filling Ingredients:
3/4 cup packed light brown sugar 
3 eggs
2 cups butternut squash puree
1/4 tsp ginger
1 tsp cinnamon
1/4 tsp nutmeg
3/4 cup evaporated milk
1/2 tsp vanilla
1/2 tsp salt
9” pie crust, pre-made or follow recipe in my stories 
1. Preheat oven to 350F.
2. Peel butternut squash and scoop out the seeds and stringy parts with a spoon.
3. Cut the squash into cubes and steam them for 10-15 minutes.  Use a fork to pierce the squash to make sure it’s tender.
4. In a bowl, thoroughly mash the squash into a purée.  A masher or a fork will work great.
5. In a separate bowl, mix sugar and eggs vigorously until combined.
6. Add the butternut squash purée and all other ingredients and mix until combined.
7. Pour mixture into pie crust.
8. Bake for 55-65 minutes or until center of the pie looks set.  If you jiggle the pie and the filling moves or looks watery, it needs to bake more.
